Chicken bhuna

Chicken bhuna is commonly made in many kitchen of Indian houses. It pairs best with Roti and plain rice.
Ingredients:
- 500g boneless chicken, cut into bite-sized pieces
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 3-4 cloves of garlic, minced
- 1-inch piece of ginger, minced
- 2 green chilies, finely chopped
- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Heat oil in a pan or skillet over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Add minced garlic, ginger, and green chilies. Cook for 2-3 minutes until fragrant.
- Add chopped tomatoes and cook until they soften and release their juices.
- Add coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Mix well and cook for another 2-3 minutes.
- Add the chicken pieces to the pan and stir to coat them with the spice mixture.
- Cook the chicken on medium-high heat until it is browned on all sides, stirring occasionally.
- Once the chicken is browned, reduce the heat to low, cover the pan, and let it simmer for about 15-20 minutes until the chicken is cooked through.
- Check for seasoning and adjust if needed. Sprinkle garam masala over the chicken and mix well.
- Garnish with fresh coriander leaves and serve hot with rice, naan, or roti.
