Chole Bhature

Chole Bhature is a popular North Indian dish that consists of spiced chickpeas (chole) served with deep-fried bread called bhature. It's a hearty and flavorful dish often enjoyed as a meal, particularly for breakfast or brunch. Here's a basic recipe for making Chole Bhature:
Ingredients:
For Chole (Spiced Chickpeas):
- 1 cup dried chickpeas (garbanzo beans), soaked overnight
- 2 large onions, finely chopped
- 2 large tomatoes, finely chopped
- 1/4 cup cooking oil
- 1 tablespoon ginger-garlic paste
- 1-2 green chilies, finely chopped
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
For Bhature (Deep-Fried Bread):
- 2 cups all-purpose flour (maida)
- 1/2 cup semolina (sooji)
- 1/2 cup yogurt
- 1/2 teaspoon baking soda
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- Water (as needed to knead the dough)
- Cooking oil for deep frying
Instructions:
For Chole:
Cook Chickpeas:
- Drain the soaked chickpeas and cook them in a pressure cooker or on the stovetop until they are tender.
Prepare Chole Masala:
- In a pan, heat oil. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and green chilies, sauté for a minute.
- Add chopped tomatoes and cook until they are soft and the oil separates.
- Add coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Cook the masala until the oil starts to separate.
- Add cooked chickpeas and garam masala. Mix well and simmer for 10-15 minutes. Adjust the consistency by adding water if needed.
- Garnish with fresh coriander leaves.
For Bhature:
Prepare Dough:
- In a large mixing bowl, combine all-purpose flour, semolina, yogurt, baking soda, sugar, and salt.
- Gradually add water and knead the mixture into a smooth and soft dough. Cover the dough and let it rest for at least 2 hours.
Shape and Fry Bhature:
- Divide the dough into small portions and roll each portion into a ball.
- Roll each ball into a round disc using a rolling pin.
- Heat oil in a deep frying pan. Fry each rolled dough disc until it puffs up and turns golden brown on both sides.
- Remove the bhature from the oil and drain excess oil on paper towels.
Serve Chole Bhature:
- Serve hot and fluffy bhature with the spiced chickpeas (chole).
- Optionally, serve with sliced onions, green chilies, and a wedge of lemon.
TIps:
Chole Bhature is often enjoyed with pickles, yogurt, or raita on the side. The combination of the flavorful chickpeas and the soft, deep-fried bread makes it a delightful and satisfying meal.
