Hoi Tod" is a Thai dish that translates to "fried oyster omelet." It's a popular street food dish known for its crispy texture and savory flavor. Here's a basic recipe for making Hoi Tod:
Ingredients:
For the Batter:
- 1 cup rice flour
- 1/2 cup all-purpose flour
- 1 cup water
- 1/2 teaspoon salt
For the Omelet:
- Fresh oysters, shucked (quantity according to preference)
- 2 large eggs
- 1 cup bean sprouts
- 2-3 spring onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon fish sauce
- 1 tablespoon oyster sauce
- 1/2 teaspoon sugar
- Vegetable oil for frying
For Serving:
- Thai chili sauce
- Fresh lime wedges
Instructions:
Prepare the Batter:
- In a mixing bowl, combine rice flour, all-purpose flour, water, and salt. Whisk until you have a smooth batter. Set aside.
Prepare the Oysters:
- If the oysters are large, you can chop them into smaller pieces.
- In a separate bowl, beat the eggs.
Make the Omelet:
- Heat a generous amount of vegetable oil in a large frying pan or wok over medium-high heat.
- Add minced garlic to the hot oil and sauté briefly until fragrant.
- Add the oysters to the pan and stir-fry for a minute or two until they start to cook.
Combine Batter and Eggs:
- Pour the prepared batter over the oysters in the pan.
- Pour the beaten eggs over the batter.
Add Vegetables and Seasoning:
- Sprinkle bean sprouts and chopped spring onions over the batter.
- Drizzle fish sauce, oyster sauce, and sprinkle sugar over the omelet.
Fry Until Crispy:
- Allow the omelet to cook without stirring for a few minutes until the edges start to crisp up.
Flip and Cook:
- Carefully flip the omelet to cook the other side. You can do this in sections if it's easier.
- Continue cooking until both sides are golden brown and crispy.
Serve:
- Transfer the Hoi Tod to a serving plate.
- Serve hot with Thai chili sauce on the side and lime wedges for squeezing over the omelet.
