Ingredients:
For Chicken Marinade:
- 1 pound (about 500g) boneless chicken, cut into thin strips
- 2 tablespoons yogurt
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
For the Rolls:
- Thin flatbreads or rotis (you can use store-bought or make them at home)
- Sliced onions
- Sliced tomatoes
- Chopped coriander leaves (cilantro)
- Mint chutney
- Lemon wedges
Instructions:
Marinating the Chicken:
- In a bowl, mix together yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, salt, and oil to form a marinade.
- Add the chicken strips to the marinade, ensuring they are well-coated. Marinate for at least 30 minutes to an hour.
Grilling the Chicken:
- Thread the marinated chicken strips onto skewers or grill them on a stovetop grill pan until they are cooked through and have a slightly charred appearance.
Assembling the Rolls:
- Heat the flatbreads or rotis on a griddle or in a pan.
- Place a portion of the grilled chicken in the center of the flatbread.
- Add sliced onions, tomatoes, and chopped coriander leaves on top of the chicken.
Rolling:
- Drizzle some mint chutney over the filling.
- Roll the flatbread tightly to form a roll or wrap. You can use foil or parchment paper to hold the roll together.
Serving:
- Serve the kathi rolls hot, optionally garnished with additional mint chutney and lemon wedges.
Variations:
- You can customize the rolls with additional toppings like shredded lettuce, cucumber, or grated cheese.
- For a vegetarian version, you can use paneer (Indian cottage cheese) or mixed vegetables as the filling.
