Kofta is a dish made of spiced meat or vegetable balls, typically served in a flavorful sauce. Here's a basic recipe for making meat kofta:


Ingredients:


For Kofta:

  • 500 grams ground meat (beef, lamb, chicken, or a combination)
  • 1 large onion, grated and excess water squeezed out
  • 2-3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1/2 cup breadcrumbs or soaked bread slices (to add moisture)
  • 1 egg (optional, for binding)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • Chopped fresh coriander or parsley for flavor
  • Oil for frying


For Kofta Sauce:


  • 1 large onion, finely chopped
  • 2-3 tomatoes, pureed
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1/2 cup yogurt
  • Salt to taste
  • 1/4 cup cream (optional, for richness)
  • Chopped fresh coriander for garnish
  • Oil or ghee for cooking


Instructions:


Prepare Kofta Mixture:

  • In a bowl, combine ground meat, grated onion, minced garlic, grated ginger, breadcrumbs (or soaked bread), egg (if using), ground cumin, ground coriander, turmeric powder, red chili powder, salt, and chopped fresh coriander or parsley.
  • Mix the ingredients well until everything is evenly combined.

Shape and Fry Koftas:

  • Take small portions of the mixture and shape them into round or oval kofta balls.
  • Heat oil in a pan and fry the koftas until they are golden brown on all sides and cooked through. Ensure the koftas are cooked evenly.

Prepare Kofta Sauce:

  • In a separate pan, heat oil or ghee. Add finely chopped onions and sauté until they are golden brown.
  • Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
  • Add ground cumin, ground coriander, turmeric powder, and red chili powder. Cook the spices for a couple of minutes.
  • Add tomato puree and cook until the oil separates from the masala.
  • Whisk yogurt and add it to the masala. Cook for a few minutes until the masala is well blended.
  • Add salt to taste and adjust the consistency of the sauce by adding water if needed.
  • Optional: Add cream for richness and simmer for a couple of minutes.

Combine Koftas and Sauce:

  • Once the koftas and sauce are ready, gently place the fried koftas into the sauce. Simmer for a few minutes to allow the koftas to absorb the flavors of the sauce.

Garnish and Serve:

  • Garnish with chopped fresh coriander.
  • Serve the koftas with rice, naan, or roti.


Note:


This is a basic recipe, and you can customize it by adding your preferred spices and herbs. Additionally, you can make vegetarian koftas using ingredients like paneer, potatoes, or mixed vegetables.
