Peking Roasted Duck is a famous Chinese dish known for its crispy skin and succulent meat. The preparation of Peking Duck involves a few steps, including air-drying, seasoning, and roasting. Here's a simplified recipe:
Ingredients:
For Duck:
- 1 whole duck (preferably around 5-6 pounds)
- 1 tablespoon honey
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon five-spice powder
- 1 teaspoon sesame oil
- 2-3 tablespoons maltose syrup (or substitute with honey)
For Pancakes:
- Chinese pancakes (readily available at Asian grocery stores)
- Hoisin sauce
- Sliced green onions
- Sliced cucumber
Instructions:
Preparing the Duck:
- Clean and pat dry the whole duck.
- In a small bowl, mix honey, soy sauce, rice vinegar, five-spice powder, and sesame oil to make the seasoning sauce.
- Brush the duck inside and out with the seasoning sauce.
- Hang the duck in a cool, dry place or refrigerate uncovered for at least 24 hours to air-dry the skin. This step helps in achieving the crispy skin.
Roasting the Duck:
- Preheat the oven to around 350°F (175°C).
- Brush the duck with maltose syrup or honey. This step adds a glaze and helps achieve the characteristic shiny appearance.
- Roast the duck in the preheated oven for about 1.5 to 2 hours or until the skin is crispy and the internal temperature reaches a safe level.
- Optionally, during the last 20-30 minutes of roasting, you can increase the oven temperature to get an extra crispy skin.
Serving:
- Once the duck is cooked, let it rest for a few minutes before carving.
- Serve the Peking Duck with Chinese pancakes, hoisin sauce, sliced green onions, and sliced cucumber.
- To eat, spread hoisin sauce on a pancake, add slices of duck, green onions, and cucumber. Roll it up like a burrito.
