Kadai Chicken is a flavorful Indian dish made with chicken cooked in a spiced tomato-based gravy, typically in a kadai or wok. Here's a basic recipe for making Kadai Chicken:
Ingredients:
For Marinating Chicken:
- 500 grams chicken, cut into pieces
- 1 cup yogurt
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- Salt to taste
For Kadai Chicken Masala:
- 2 tablespoons oil
- 1 large onion, finely sliced
- 2 tomatoes, chopped
- 2 green bell peppers, cut into strips
- 1 tablespoon ginger-garlic paste
- 2-3 green chilies, chopped
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- 1 teaspoon kasuri methi (dried fenugreek leaves)
- Fresh coriander leaves for garnish
- Salt to taste
Instructions:
Marinate Chicken:
- In a bowl, combine chicken pieces with yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt. Mix well and let it marinate for at least 30 minutes.
Prepare Kadai Chicken:
- Heat oil in a kadai or wok. Add finely sliced onions and sauté until they turn golden brown.
Add Aromatics:
- Add ginger-garlic paste and chopped green chilies. Sauté for a minute until the raw smell disappears.
Add Tomatoes:
- Add chopped tomatoes. Cook until the tomatoes are soft and the oil starts separating from the masala.
Add Spices:
- Add coriander powder, cumin powder, turmeric powder, red chili powder, and garam masala. Mix well.
Cook Chicken:
- Add the marinated chicken to the masala. Cook until the chicken is browned.
Add Bell Peppers:
- Add the bell pepper strips to the kadai. Stir well and cook for a few minutes until the bell peppers are slightly tender.
Crushed Kasuri Methi:
- Crush kasuri methi between your palms and add it to the kadai. This adds a distinct flavor to the dish.
Simmer:
- Simmer the Kadai Chicken on low heat until the chicken is fully cooked and the flavors are well blended.
Garnish:
- Garnish with fresh coriander leaves.
Serve:
- Serve hot Kadai Chicken with naan, roti, or rice.
