The soup has a sweet and savory taste due to the slow-cooked caramelization of onions. Here's a basic recipe for French Onion Soup:
Ingredients:
- 4 large onions, thinly sliced
- 3 tablespoons butter
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon sugar
- 1/2 cup dry white wine (optional)
- 8 cups beef or vegetable broth
- Salt and black pepper to taste
- French baguette, sliced
- Gruyère or Swiss cheese, grated
Instructions:
Caramelize the Onions:
- In a large pot, melt butter and olive oil over medium heat. Add the thinly sliced onions and cook, stirring frequently, until the onions are soft and golden brown.
- Sprinkle sugar over the onions to aid in caramelization. Continue cooking until the onions are deeply caramelized, which can take about 30-40 minutes.
Deglaze with Wine (Optional):
- Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom. Cook for a few minutes until the wine evaporates.
Add Garlic and Broth:
- Add minced garlic to the pot and cook for a minute until fragrant. Pour in the beef or vegetable broth. Bring the mixture to a simmer.
Season and Simmer:
- Season the soup with salt and black pepper to taste. Reduce the heat to low and let the soup simmer for about 20-30 minutes to allow the flavors to meld.
Prepare Toasted Bread (optional):
- While the soup simmers, preheat the oven broiler. Toast slices of French baguette until they are golden brown.
Serve the Soup:
- Ladle the hot soup into oven-safe bowls. Place a slice of toasted bread on top of each bowl.
Add Cheese:
- Sprinkle a generous amount of grated Gruyère or Swiss cheese over the bread.
Broil:
- Place the soup bowls under the broiler until the cheese is melted and bubbly, with a golden-brown crust.
Serve Hot:
- Carefully remove the bowls from the oven and serve the French Onion Soup hot.
